GIFT transfers unfertilised gametes into the fallopian tube for fertilisation to occur inside the body; ZIFT transfers an already-fertilised zygote/early embryo into the fallopian tube.

Both GIFT and ZIFT are Assisted Reproductive Technologies (ART) used to help infertile couples, and both involve transferring material into the fallopian tube ('intra-fallopian'), but they differ in what is transferred:
