Brown adipose tissue (brown fat), which is rich in mitochondria, produces heat without muscle shivering — this is important in neonates who cannot yet shiver effectively.

Brown fat cells are multilocular (contain many small lipid droplets) and are packed with mitochondria, whose iron-containing cytochromes give the tissue its characteristic brown colour. These mitochondria contain a unique protein called thermogenin (uncoupling protein-1, UCP1), which allows the energy from fatty acid oxidation to be released directly as heat instead of being used to make ATP.
