Step 1. The olfactory organs are patches of yellow-tinged olfactory epithelium located on the roof of the nasal cavity, covered by a thin mucus layer and bordered above by connective tissue carrying olfactory glands.

Step 2. This epithelium contains three cell types: supporting cells, basal cells, and millions of pin-shaped olfactory receptor cells, which are unusual in being bipolar neurons.

Step 3. The olfactory glands and supporting cells secrete the protective mucus layer that the receptor cells' cilia (olfactory hairs) project into to dissolve airborne chemicals.

Step 4. The unmyelinated axons of the olfactory receptor cells gather into filaments that form the olfactory nerve (cranial nerve I); these pass through the foramina of the cribriform plate and synapse with mitral and tufted cells inside the olfactory bulb. …
