Food preservatives are chemicals added in small, regulated amounts to food to inhibit the growth of spoilage-causing microorganisms or to slow oxidative degradation, keeping food safe and edible for longer; common examples are sodium benzoate and sodium metabisulphite.

Food spoilage occurs mainly through the growth of bacteria, yeasts, and moulds, or through oxidative/enzymatic changes (rancidity, browning). A food preservative works by either killing or inhibiting the growth of these microorganisms, or by preventing oxidation, without making the food unsafe to eat when used at permitted concentrations. Two commonly used examples: (i) Sodium benzoate (C6H5COONaC_6H_5COONa) — used in acidic foods and beverages such as pickles, jams, and soft drinks, where it is effective at inhibiting the growth of bacteria, yeast, and fungi. …
