A tissue that renews itself continuously, such as the outer layer of skin or the lining of the gut, is the best place to look, because at any moment it will have cells caught in every stage of mitosis.

Mitosis is not something that happens once and then stops — throughout an organism's life, it continually replaces cells that wear out, one of its central roles in cell repair and replacement. The chapter specifically points to several examples of tissue that undergo this constant renewal:
