The dark central wood is heartwood: old secondary xylem that has become chemically infiltrated with tannins, resins, gums, and other dark organic deposits, making it dark-coloured and non-functional for conduction.

As a tree ages, the secondary xylem (wood) laid down in the early years, lying at the very centre of the trunk, gradually stops functioning in water conduction and becomes structurally and chemically modified in a process called heartwood formation:

  • The living parenchyma cells in this central wood die.
  • Various organic substances — tannins, resins, oils, gums, aromatic compounds, and sometimes crystals — are deposited within the xylem cells and vessel walls.
  • In many species, the xylem vessels also become plugged by tyloses (balloon-like ingrowths of neighbouring parenchyma cells into the vessel lumen), which physically blocks the vessels. …
