Isinglass is obtained from the dried swim bladders of certain fishes, particularly sturgeon and other large fish. It is almost pure collagen. When added to a cloudy, freshly fermented wine (or beer), the isinglass protein binds to the tiny suspended particles (yeast cells, proteins, and other fine sediment) that make the liquid look hazy.
