Molasses is the most commonly used substrate in distilleries for industrial ethanol production via yeast fermentation.

Molasses is a thick, sugar-rich by-product of sugar refining (left after sucrose crystals are removed from sugarcane or sugar-beet juice). Because it is cheap, abundant (especially in sugar-producing regions like India), and rich in fermentable sugars, it is the standard substrate fed to Saccharomyces cerevisiae (yeast) in distilleries, which ferments the sugars anaerobically to produce ethanol and CO2.
