The pink colour of a legume root nodule is due to Leghaemoglobin, a pigment that mops up free oxygen to protect nitrogenase, the enzyme that fixes atmospheric nitrogen.

Legume roots form nodules through a symbiotic association with the nitrogen-fixing bacterium Rhizobium. Inside these nodules, the bacteroids (the differentiated form of Rhizobium) carry out biological nitrogen fixation using the enzyme nitrogenase, which converts atmospheric N₂ into ammonia.

The problem this creates: nitrogenase is extremely sensitive to oxygen and is irreversibly inactivated in its presence, yet the nodule tissue is respiring and needs oxygen for ATP production.
