Fermentation = enzyme-catalysed breakdown of sugars; molasses →\to (invertase) glucose/fructose →\to (zymase) ethanol + CO2_2.

Concept — fermentation. Fermentation is the slow chemical decomposition of large organic molecules (such as sugars) into simpler molecules through the action of enzymes (biological catalysts produced by micro-organisms like yeast). It occurs at moderate temperature (about 303−-308 K) in the absence of air.

Ethyl alcohol from molasses. Molasses is the thick dark syrup left after crystallising sugar from sugarcane juice; it is rich in sucrose.

  1. The enzyme invertase (from yeast) hydrolyses sucrose into glucose and fructose: C12H22O11+H2O→invertaseC6H12O6+C6H12O6C_{12}H_{22}O_{11} + H_2O \xrightarrow{\text{invertase}} C_6H_{12}O_6 + C_6H_{12}O_6 …
