Short notes on reducing sugars, protein denaturation and enzymes.

  1. Reducing sugar: Carbohydrates that possess a free aldehydic (–CHO) or free ketonic (>C=O) group are able to reduce Tollens' reagent (to a silver mirror) and Fehling's solution (to a red precipitate of Cu2OCu_2O); such sugars are called reducing sugars. All monosaccharides (e.g. glucose, fructose) are reducing sugars. Among disaccharides, maltose and lactose are reducing sugars (they retain a free anomeric –OH), whereas sucrose is a non-reducing sugar, since both anomeric carbons of glucose and fructose are involved in the glycosidic linkage.
  2. Denaturation of proteins: A protein's biological activity depends on its native (natural) three-dimensional conformation, which is held together by hydrogen bonds and other weak interactions. When a protein is subjected to a physical change (such as heat) or a chemical change (such as change in pH), these stabilising hydrogen bonds are disrupted; the globules unfold, and helices get uncoiled, so the protein loses its characteristic secondary and tertiary structure and, along with it, its biological activity. This phenomenon is called denaturation. Common examples include the coagulation of egg white on boiling, and curdling of milk on adding acid. …
