Polarization means restricting vibrations to one particular transverse direction — something only a transverse wave can have done to it, since a longitudinal wave already vibrates purely along the line of travel.

Light consists of oscillating electric (and magnetic) field vectors that vibrate perpendicular to the direction in which the wave travels — it is a transverse wave. In ordinary (unpolarized) light, this transverse vibration occurs randomly in all directions perpendicular to propagation; passing it through a polarizer (like a Polaroid sheet) filters out all but one such transverse direction, producing polarized light where the vibration is confined to a single plane.
