Vernalisation is a cold-induced acceleration of flowering, allowing certain plants (or their germinating seeds) to flower only after passing through a period of low temperature.

Many plants — especially biennials and winter cereals like winter wheat and winter barley — require a period of exposure to low temperature before they can transition from the vegetative to the reproductive (flowering) phase. This chilling requirement, when artificially applied to seeds or seedlings to hasten and ensure flowering, is called vernalisation.
