Section 16.1.2.3 explains that the more unsaturated a fat is, the lower its melting point (liquid at room temperature); vanaspati ghee is produced industrially by hydrogenating a liquid vegetable oil -- adding hydrogen across its C=C double bonds -- which removes the chain 'kinks' unsaturation causes, lets the chains pack more closely, and converts the oil into a solid fat at room temperature.
