Section 16.1.2.3 describes saturated fatty-acid chains as long, straight runs of tetrahedral carbons with no double bonds; unsaturated chains contain one or more C=C double bonds, each of which introduces a 'kink' in the chain (Fig. 16.1).
Step 2. Packing and melting-point difference.
