Almost all organic compounds are built from carbon bonded covalently to hydrogen and other non-metals. Covalent bonds are formed by sharing of electron pairs, giving molecules with low melting and boiling points, weak intermolecular (van der Waals) forces, and molecular (not ionic-lattice) structure. Because the C-H/C-C bonds are of moderate strength and the molecules are volatile, they vaporise easily and react rapidly and exothermically with atmospheric oxygen (combustion), releasing heat, CO2 and H2O.
