The gritty particles in pear or peach flesh are clusters of sclereids — short, extremely thick-walled, lignified sclerenchyma cells embedded among the softer fruit tissue.

Sclerenchyma, one of the ground tissue's simple tissues, occurs in two forms: elongated fibres, and short, variously shaped cells called sclereids. Sclereids have exceptionally thick, hard, heavily lignified walls, often with only a very narrow internal cavity left for the cell contents.

  • In fruits like pear, groups of sclereids are scattered through the otherwise soft, fleshy tissue of the fruit.
