Enzymes are protein biocatalysts that accelerate specific biochemical reactions; e.g. diastase converts starch to maltose.

Enzyme catalysts (biochemical catalysts) are complex nitrogenous organic molecules, essentially globular proteins, produced by living plants and animals. They catalyse the numerous reactions occurring in living systems under mild conditions of temperature and pH, and each enzyme is highly specific for its substrate.

Example: diastase catalyses the hydrolysis of starch to maltose:

2(C6H10O5)n + n H2O --diastase--> n C12H22O11
