Because a living cell continuously runs enzyme-catalysed metabolic pathways rather than settling into a resting, unchanging chemistry, it stays capable of doing biological work.

Living organisms are built from thousands of carbon compounds, and the chemistry of a cell is not a fixed, completed arrangement of molecules sitting quietly in place. Reactions are constantly occurring, very often not as single isolated steps but as metabolic pathways - multistep sequences in which each step is driven forward by its own enzyme, converting one compound into the next until a final product is reached.

The conversion of glucose into pyruvic acid is a clear illustration of this: although it can be written on paper as one simple overall reaction, it actually proceeds through around ten distinct enzyme-catalysed steps. And the very same pathway, with only small changes in condition, can be steered towards different end products - lactic acid in oxygen-starved muscle, pyruvic acid under normal aerobic conditions, or ethanol during fermentation in yeast.

A genuinely finished chemical system, one that has reached equilibrium, has no reactions still actively converting substrate into product - the concentrations have simply stopped changing. A living cell's metabolic pathways, by contrast, are always actively running, substrate constantly being taken in and product constantly being formed and used. …
