Step 1 – Everyday and biological uses.

  • Cleansing: the washing action of soaps and detergents works by emulsifying grease/oil into water.
  • Digestion: in the intestine, bile salts emulsify fats (break them into fine droplets), greatly increasing the surface area for the enzyme lipase to digest them.
