Step 1 – What enzymes are. Enzymes are biological catalysts (also called biochemical catalysts). They are globular protein molecules produced by living plants and animals. They are extremely efficient (large turnover) and highly specific — each enzyme catalyses one particular reaction (e.g. urease only hydrolyses urea).

Examples: invertase (sucrose → glucose + fructose), maltase, zymase, urease, pepsin.

Step 2 – Mechanism of enzyme catalysis (two steps).

  1. The reactant molecule (substrate, SS) binds to specific active sites on the enzyme surface (with a shape/geometry complementary to the substrate — the "lock-and-key" fit), forming an activated enzyme–substrate complex ESES:
