In industrial microbiology and biotechnology, once a useful microbial strain (for producing an antibiotic, enzyme, organic acid, alcoholic beverage or similar product) has been identified, it must be grown on a scale far larger than a laboratory flask to make commercial production economical. This large-scale cultivation is carried out in fermentors (also called bioreactors) — large metal vessels, often several thousand litres in capacity, fitted with systems to control and monitor temperature, pH, oxygen supply (aeration), agitation/stirring, and the continuous or batch-wise addition of nutrients, while maintaining sterility to prevent contamination by unwanted organisms. The microorganism metabolises the nutrient medium and, depending on the process, either grows in bulk (as in single-cell protein production) or secretes the desired product (such as penicillin from Penicillium, or citric acid from …
