Why MSG belongs to the flavour-enhancer class

MSG is the sodium salt of glutamic acid, an amino acid that occurs naturally in protein-rich foods such as tomatoes, cheese and mushrooms. Glutamate is what the tongue detects as umami, the savoury "fifth taste" alongside sweet, sour, salty and bitter. Adding MSG raises the free-glutamate content, so the food tastes more savoury, more "meaty" and fuller in the mouth — without contributing a distinct flavour of its own.

That is precisely the definition of a flavour enhancer: it does not preserve, it does not emulsify, it does not stop caking — it makes the existing flavour stronger. It is very widely used in instant noodles, soup powders, seasoning mixes, savoury snacks and Chinese-style cooking.
