Microbes drive industrial production of alcohol, organic acids, antibiotics, enzymes and vitamins through fermentation.

Micro-organisms are of great importance in industrial (microbial) production, where they are grown in large vessels called fermenters to make useful products on a commercial scale. Important examples:

  1. Alcoholic beverages and alcohol: Yeast (Saccharomyces cerevisiae) ferments sugars to produce ethanol; it is used to make wine, beer, whisky and industrial alcohol, and in baking (bread).
  2. Organic acids: Aspergillus niger produces citric acid; Acetobacter aceti produces acetic acid (vinegar); Lactobacillus produces lactic acid; Clostridium produces butyric acid.
  3. Antibiotics: Penicillium notatum/chrysogenum produces penicillin; Streptomyces produces streptomycin and tetracycline.
  4. Enzymes: microbes produce industrial enzymes such as amylase, lipase, protease (used in detergents), pectinase and streptokinase (a 'clot buster' used medically). …
