Baker's yeast (Saccharomyces cerevisiae) ferments dough sugars, releasing CO2CO_2 that makes bread rise and become soft and porous.

What it is. Baker's yeast is the unicellular fungus Saccharomyces cerevisiae, one of the most useful microbes in human welfare.

How it works in bread-making.

  • Yeast added to the dough carries out fermentation of the sugars present in the flour.
  • This produces carbon dioxide gas: C6H12O6→yeast2C2H5OH+2CO2↑C_6H_{12}O_6 \xrightarrow{\text{yeast}} 2C_2H_5OH + 2CO_2\uparrow
