Q.Carbohydrates are optically active polyhydroxy aldehydes and ketones. They are also called saccharides. All those carbohydrates which reduce Fehling's solution and Tollen's reagent are referred to as reducing sugars. Glucose, the most important source of energy for mammals, is obtained by the hydrolysis of starch. Vitamins are accessory food factors required in the diet. Proteins are the polymers of α\alpha-amino acids and perform various structural and dynamic functions in the organisms. Deficiency of vitamins leads to many diseases. Answer the following :

(a) The penta-acetate of glucose does not react with Hydroxylamine. What does it indicate ?

(a) Glucose pentaacetate has no free –CHO (locked cyclic acetal), so it gives no oxime — glucose is cyclic. Vitamin C is water-soluble, hence not stored (excreted in urine). Peptide linkage = −CO–NH−-\text{CO–NH}- amide bond; denaturation = loss of native protein shape/activity keeping the primary structure. (c) Anomers differ only at the anomeric carbon; a glycosidic linkage is the C–O–C bond between two sugars.

Part (a)

(a) Penta-acetate of glucose + hydroxylamine

Hydroxylamine adds only to a free carbonyl (> ⁣C=O>\!C{=}O) to form an oxime. Free glucose reacts because a trace of its open-chain aldehyde is present (cyclic hemiacetal ⇌\rightleftharpoons open aldehyde). On acetylating all five –OH groups, the anomeric centre becomes a full acetal that cannot reopen to the aldehyde. No free –CHO ⇒\Rightarrow no reaction with NH2OHNH_2OH. This proves glucose normally exists in a cyclic (pyranose) ring, not as an open-chain aldehyde.

(b) Why vitamin C is not stored

Vitamins are fat-soluble (A, D, E, K — stored in liver/adipose tissue) or water-soluble (B-group, C). Vitamin C (ascorbic acid) is water-soluble; the body has no store for it, and any excess is filtered out by the kidneys and lost in urine. So it must be taken regularly in the diet.

(c) Definitions (proteins)

(i) Peptide linkage — the covalent amide bond −CO–NH−-\text{CO–NH}- formed by condensation (loss of H2OH_2O) between the α\alpha-carboxyl of one amino acid and the α\alpha-amino group of the next.
