Respiration breaks organic substrates down gradually, across many controlled steps, rather than all at once, and its substrates are mainly carbohydrates but can also be proteins, fats or organic acids.

This definition of respiration packs two important ideas into a few words, and both are worth unpacking separately.

Step-wise oxidative breakdown: The complete oxidation of a substrate like glucose, if it happened in one single step, would release its energy mostly as heat, which a cell has no way to capture and use. Instead, the C-C bonds of the organic substrate are broken through a chain of many separate, enzyme-controlled reactions — the ten reactions of glycolysis, the link reaction, and the several steps of the citric acid cycle. At certain of these steps the energy released is just the right size to be trapped as ATP by substrate-level phosphorylation, or as reduced carriers (NADH + H+, FADH2) that later drive ATP synthesis through the electron transport system.
