Centre of mass is a purely mass-distribution property; centre of gravity is a gravity-dependent property — they coincide only when gravity is uniform over the body.

Centre of Mass (CM)Centre of Gravity (CG)
The point at which the entire mass of the body is considered to be concentrated for describing its translational motion. The point through which the entire weight of the body is considered to act.
Depends only on the distribution of mass within the body — purely a geometric/mass property.Depends on the distribution of mass AND on the gravitational field acting on the body.
Exists and is well-defined even in the absence of gravity (e.g. in deep space, a body still has a centre of mass).Has meaning only in the presence of a gravitational field — without gravity, there's no "weight" to speak of, so CG is undefined.
Used to analyse the dynamics/kinematics of a system of particles (Newton's laws applied to the CM).Used in statics, to determine balance/stability and the point of application of the resultant weight.
Independent of variations in gg over the body.If gg varies from one part of the body to another (as it does for very large or very tall bodies, or bodies far from Earth), the CG can shift relative to the CM.
