Step 1. Many desert plants develop a thick cuticle on their leaf surfaces, which reduces water loss through the leaf's outer layer. Step 2. They also commonly keep their stomata (the pores through which water vapour is lost) sunk in deep pits rather than flush with the leaf surface, further cutting down transpirational water loss. Step 3. A number of desert plants additionally use a special photosynthetic pathway called CAM (Crassulacean Acid Metabolism), which allows their stomata to remain closed during the heat of the day -- when water loss would otherwise be greatest -- and open instead at night.
