Steam distillation purifies a compound by carrying it over with steam, so it only works cleanly when the impurities present are non-volatile in steam.

Steam distillation is used to purify liquids that are steam-volatile, immiscible with water, and possess a fairly high vapour pressure at the boiling point of water (~100C). When steam is passed through the mixture, the desired steam-volatile component co-distils with the water vapour and is condensed and separated (using its immiscibility with water), leaving behind the non-volatile impurities in the distillation flask.
