Sucrose is a non-reducing disaccharide that on acid/enzyme (invertase) hydrolysis gives an equimolar mixture of glucose and fructose — never glucose alone.

Sucrose is formed by an α,β\alpha,\beta-1,2-glycosidic bond between the anomeric carbons of α\alpha-D-glucose (C1) and β\beta-D-fructose (C2).
