The alimentary canal is the long tube along which food travels and is progressively broken down: mouth, pharynx, oesophagus, stomach, small intestine (duodenum, jejunum, ileum) and large intestine (caecum, colon, rectum), ending at the anus. Special features along the way include the epiglottis, which protects the airway during swallowing, and the sphincters (gastro-oesophageal, pyloric, ileo-caecal) that control the one-way movement of food between regions.
