Step 1. Histologically, most of the pancreas is made of clusters of secretory cells called acini, which together form the gland's exocrine tissue.

Step 2. Acinar cells secrete an alkaline pancreatic juice, containing enzymes such as pancreatic amylase, lipase, trypsinogen and chymotrypsinogen, which drains via the pancreatic duct into the duodenum — a duct-mediated, digestive secretion, which is what defines exocrine function.
