PUFA (poly-unsaturated fatty acids) have two or more double bonds; they are essential, heart-protective dietary fats that lower LDL cholesterol.

Fatty acids are classified by their double bonds:

  • Saturated fatty acids: no double bonds (mostly animal fats; raise cholesterol).
  • Monounsaturated fatty acids: one double bond.
  • Poly-unsaturated fatty acids (PUFA): two or more double bonds in the hydrocarbon chain.

Examples of PUFA: linoleic acid, alpha-linolenic acid (omega-3), and arachidonic acid. Some of these (linoleic and linolenic) are 'essential fatty acids' — the body cannot make them and must get them from the diet (vegetable oils, nuts, fish oils).

Significance of PUFA:

  1. They help lower the level of LDL ('bad') cholesterol in the blood.
  2. This reduces deposition of cholesterol in arteries, lowering the risk of atherosclerosis, high blood pressure and coronary heart disease.
