Carbohydrates are monosaccharides (glucose, fructose), disaccharides (sucrose, maltose, lactose) and polysaccharides (starch, glycogen, cellulose); they provide and store energy and form structures.

Carbohydrates are organic compounds of carbon, hydrogen and oxygen (general formula about (CH2O)n). They are the body's principal source of energy. Based on the number of simple sugar units, they are classified into three main types:

  1. Monosaccharides (simple sugars): the simplest carbohydrates, made of a single sugar unit, which cannot be hydrolysed further.
  • Examples: glucose (grape sugar, the main blood sugar and immediate energy source), fructose (fruit sugar) and galactose.

  • Significance: they are directly absorbed and provide instant energy; glucose is the primary fuel for cells.

  1. Disaccharides: formed by the union of two monosaccharide units with the loss of a water molecule.
  • Examples: sucrose (glucose + fructose, cane/table sugar), maltose (glucose + glucose, malt sugar) and lactose (glucose + galactose, milk sugar).

  • Significance: they serve as transport and readily available energy sugars; lactose is important in milk.

  1. Polysaccharides: large, complex carbohydrates formed by many monosaccharide units joined together.
  • Examples: starch (energy-storage carbohydrate of plants), glycogen ('animal starch', the storage carbohydrate in liver and muscle) and cellulose (structural carbohydrate of plant cell walls; dietary fibre for humans). Chitin is another structural polysaccharide (in insect exoskeletons). …
