Monosaccharides are the simplest carbohydrates: single polyhydroxy aldehyde or ketone units that cannot be broken down into any smaller carbohydrate by hydrolysis. Glucose is the syllabus example.

Oligosaccharides are formed when a small number of monosaccharide units (conventionally two to ten) are joined together by glycosidic bonds; when exactly two units are joined, the oligosaccharide is called a disaccharide. Sucrose -- one glucose unit joined to one fructose unit -- is the disaccharide covered in this syllabus.

Polysaccharides are much larger molecules built from very many monosaccharide units joined together in long chains, often thousands of units long. Starch and cellulose, both built entirely from glucose units, are the two polysaccharides covered in this syllabus.
