Step 1 – Definition. An emulsion is a colloidal dispersion of one liquid in another immiscible liquid. Usually one of the two liquids is water. Emulsions are generally unstable and need an emulsifying agent to be stabilised.

Step 2 – Two types.

  • Oil-in-water (o/w) emulsion: oil is the dispersed phase and water is the dispersion medium. Examples: milk (liquid fat dispersed in water), vanishing cream.
  • Water-in-oil (w/o) emulsion: water is the dispersed phase and oil is the dispersion medium. Examples: butter, cold cream, cod-liver oil. …
