The straight chain is proved by the fact that glucose on prolonged heating with HI gives nn-hexane; the five −OH-OH groups (each on a different carbon) are proved by the formation of glucose pentaacetate and its stability.

(a) Presence of a straight chain

On prolonged heating with hydroiodic acid (HIHI), glucose is reduced to nn-hexane. Since all six carbon atoms of the product form a single continuous (unbranched) chain, the six carbon atoms of glucose must also be linked in a straight chain.

Glucose→  HI,  Δ  CH3−CH2−CH2−CH2−CH2−CH3  (n-hexane)\text{Glucose} \xrightarrow{\;HI,\;\Delta\;} CH_3-CH_2-CH_2-CH_2-CH_2-CH_3 \;(n\text{-hexane})

(b) Presence of five −OH-OH groups on different carbons

Glucose reacts with acetic anhydride (or acetyl chloride) to give glucose pentaacetate. Since five acetyl groups are introduced, glucose must contain five −OH-OH groups. …
