Acid (or enzymatic) hydrolysis of sucrose breaks the glycosidic linkage, releasing glucose and fructose, which are then separated by crystallisation.

Sucrose (cane sugar) is a disaccharide built from one glucose unit and one fructose unit joined by a glycosidic linkage between C1 of glucose and C2 of fructose. Boiling a sucrose solution with dilute hydrochloric acid (or treating it with the enzyme invertase/sucrase) hydrolyses this glycosidic bond:
