Based on their three-dimensional shape, proteins fall into two broad classes:
Fibrous proteins: polypeptide chains lie parallel along an axis, held by hydrogen bonds/disulfide bonds, forming long fibres or sheets. They are insoluble in water and serve structural roles. Example: keratin (found in hair, wool, nails), collagen (connective tissue/tendons), myosin (muscle).
Globular proteins: polypeptide chains fold and coil around themselves into a compact, roughly spherical shape. They are generally soluble in water and often have biological/catalytic function. Example: insulin (hormone), albumin (egg white), haemoglobin.
