Capacitance is the ratio of charge stored to the potential difference across a capacitor.

The capacitance of a capacitor is defined as the ratio of the magnitude of charge QQ stored on either conductor (plate) to the potential difference VV between the conductors:

C=QVC = \frac{Q}{V}

It is a measure of a capacitor's ability to store charge per unit potential difference, and depends only on the geometry of the conductors and the medium between them (not on QQ or VV individually).
